Brazilian caramel flan
The condensed milk classic, baked in a water bath. Allow cooling and chilling time: the flan must set before unmolding. Makes 12 slices.
What we'll need
- 395 g condensed milk
- 600 ml milk
- 4 pieces eggs
- 1 cup sugar for the caramel
- 80 ml hot water for the caramel
- 1 liter hot water for the water bath, approximately
1 cup = 240 ml. Measurements follow the original recipe.

Here's how it's done.

Prepare the pan and oven
Preheat oven to 200 °C. Set out a 22 cm ring pan, a larger roasting pan and a tall saucepan for caramel. Heat water for caramel and the water bath.

Make the caramel
Melt sugar in the saucepan over low heat until amber, not too dark. Gradually add caramel water: it bubbles vigorously. Stir until lumps dissolve. Pour into the ring pan and rotate with oven mitts to coat.

Blend and fill the pan
Crack eggs individually into a bowl, transfer to the blender and add milk and condensed milk. Blend until combined. Pour into the caramel-coated pan and set it inside the roasting pan.

Bake in a water bath
Add hot water to the roasting pan to about halfway up the ring pan. Bake for about 60 minutes. Edges should be firm and the center slightly wobbly, not liquid. Remove carefully.

Cool, chill and unmold
Remove the pan from the water bath and cool for about 30 minutes. Refrigerate for at least 3 hours; start the timer when refrigerating. Once cold and firm, loosen the edge and invert onto a rimmed plate to catch caramel.
About this recipe and its sources
We use Panelinha's base with four eggs, a 22 cm pan and oven at 200 °C. Nestlé uses different ratios, pan and temperature; their times were not averaged. Total includes about 10 minutes for caramel, 60 baking, 30 cooling and 3 hours chilling.
