Pão de queijo (cheese bread)
A batch to share, made with scalded sweet cassava starch and semi-cured cheese. Makes about 30 rolls on two or three baking sheets.
What we'll need
- 500 g sweet cassava starch
- 360 ml milk
- 120 ml oil
- 2 pieces eggs
- 300 g grated semi-cured cheese
- 1 teaspoon salt
1 cup = 240 ml. Measurements follow the original recipe.

Here's how it's done.

Get ready to bake.
Preheat the oven to 180 °C. Put starch and salt in a large bowl. Grate the cheese, measure milk and oil, and set out the eggs and baking sheets.

Scald the starch.
Heat milk and oil together until they start boiling. Carefully pour over the starch, stirring with a sturdy spoon. Wait about 5 minutes until warm.

Mix in eggs and cheese.
Add eggs one at a time, mixing well. Add cheese and knead until even. The dough is soft and slightly sticky, but should be shapeable.

Shape the rolls.
Make about 30 balls the size of a large walnut. Arrange on trays at least 3 cm apart. The photos show one of the trays.

Bake until golden.
Bake for 30 to 35 minutes. Check at 30: they should rise and develop golden patches. If baking two trays together, quickly swap their positions after the first 25 minutes.
