Passion fruit mousse
Prepare gelatin, blend and let the refrigerator do the rest. Uses unsweetened concentrated juice and makes 6 small glasses. Includes 2 hours to set.
What we'll need
- 395 g condensed milk
- 300 g cream
- 240 ml unsweetened concentrated passion fruit juice
- 1 teaspoon unflavored powdered gelatin
- 3 tablespoons cold water for hydrating
- 2 tablespoons passion fruit pulp for topping (optional)
1 cup = 240 ml. Measurements follow the original recipe.
Serves 6 people.

Here's how it's done.

Prepare the base and glasses
Measure condensed milk, cream, juice, gelatin and water. Keep six clean small glasses nearby. If using a topping, set fruit pulp aside.

Hydrate and dissolve gelatin
Sprinkle gelatin over cold water in a small bowl and hydrate according to the package, usually 5 minutes. Warm gently in a water bath, stirring just until dissolved.

Blend until smooth
Put condensed milk, cream and juice in the blender. Blend to combine. Add dissolved, still-liquid gelatin and blend again to distribute evenly.

Divide among glasses
Divide the cream among glasses, leaving a small gap at the top. Tap gently on the counter to settle. Place on a tray for carrying.

Chill and serve
Cover glasses and refrigerate for at least 2 hours. Start the timer when putting them in. Check they are set and top with a little fruit pulp if desired.
About this recipe and its sources
Nestlé's concentrated juice and unflavored gelatin base, cross-checked with Tempero de Família's fruit and gelatin method. Here gelatin dissolves gently in a water bath. Preparation takes about 10 minutes plus at least 2 hours of chilling. Not vegetarian.
