Chicken with okra
Okra goes into the pan first, then returns to join the chicken in a homemade tomato sauce.
What we'll need
- 1,000 g skinless, bone-in chicken drumsticks and thighs
- 400 g okra
- 1 piece onion
- 2 cloves garlic
- 2 pieces tomatoes
- ½ piece lemon
- 3 tablespoons oil
- 240 ml hot water
- 1 teaspoon salt
1 cup = 240 ml. Measurements follow the original recipe.
Serves 4 people.
Here's how it's done.

Prepare everything before heating.
Wash and dry okra thoroughly, trim the ends and slice. Chop onion, garlic and tomato. Season chicken with salt and lemon, using separate utensils.

Sauté the okra.
Heat 1 spoonful of oil in the pot. Add dry okra and sauté over medium heat for about 5 minutes. Transfer to a clean plate and set aside.

Brown the chicken.
Heat the remaining oil and brown chicken on both sides for about 12 to 15 minutes. Add onion, garlic and tomato; stir for 3 more minutes.

Simmer in the sauce.
Add hot water, scrape the bottom with a spoon and partially cover. Simmer over low heat for 25 to 30 minutes, turning pieces once. Add water if the sauce dries out.

Return the okra.
Once chicken is fully cooked, add the reserved okra. Heat for 5 more minutes, taste the sauce and adjust salt. Serve hot.
