Banana farofa
Firm banana, cassava flour and fragrant sautéed aromatics. Made in a frying pan to accompany beans, fish or Sunday lunch.
What we'll need
- 2 pieces ripe, firm prata bananas
- 1½ cups toasted cassava flour
- ½ piece red onion
- 1 clove garlic
- 2 tablespoons butter
- ¼ teaspoon salt
1 cup = 240 ml. Measurements follow the original recipe.

Here's how it's done.

Chop and measure.
Chop onion and garlic. Cut bananas into thick half-moons. Measure flour and butter before turning on the heat.

Sauté the aromatics.
Melt butter over medium-low heat. Stir in onion for 3 to 4 minutes. Add garlic and cook for 1 more minute without letting it darken.

Warm the banana.
Add banana to the pan and stir gently for 1 to 2 minutes. Let the pieces color a little while keeping their shape.

Add the flour.
Gradually add flour, folding it into the mixture. Sprinkle in salt and stir until the grains absorb butter and spread among the bananas.

Finish the texture.
Stir over low heat for about 5 minutes. When lightly crisp and fragrant, turn off the heat. Taste and adjust salt before transferring to a dish.
