Remove the kernels.

Remove husks and silk. Carefully cut kernels from the cobs and measure 3 cups, about four ears. Set out milk, sugar and cinnamon.

Put corn and milk in the blender. Blend until kernels are finely crushed and the mixture is uniformly yellow.

Pour through a fine sieve over a bowl. Press with a spoon to extract liquid; set aside pulp left in the sieve.

Cook the pudding.

Pour liquid into a saucepan and mix in sugar. Heat over medium-low, stirring constantly. Once thickened and bubbling, cook for 5 more minutes, stirring all the time.

Divide among six small bowls, let the strongest heat dissipate and refrigerate for at least 1 hour. Sprinkle cinnamon when serving.
