Baked cocada

Fresh coconut, eggs, sugar and butter become a spoon dessert. Use finely grated fresh coconut to keep it moist. Makes 6 small servings.

  • 200 g finely grated fresh coconut
  • 3 pieces eggs
  • 2 cups sugar
  • 1 tablespoon melted butter
  • 1 teaspoon butter for greasing

1 cup = 240 ml. Measurements follow the original recipe.

Serves 6 people.

Preheat and grease

Preheat oven to 180 °C. Grease a shallow ovenproof dish with reserved butter. Set out measured ingredients; coconut should be fresh and grated.

Mix eggs, butter and sugar

Crack eggs separately, transferring to a larger bowl. Add melted butter that has cooled until warm, and mix. Gradually add sugar, stirring until combined.

Fold in coconut

Add coconut and mix with a spatula. Spread evenly in the greased dish without packing down.

Bake until golden

Bake on the middle rack for about 40 minutes. Top should be golden and center moist, without liquid egg. Check from 30 minutes if your oven browns quickly.

Remove with oven mitts and place on a heatproof surface. Wait about 15 minutes before scooping portions with a spoon.

About this recipe and its sources

Panelinha's version with fresh coconut, eggs and sugar. Nestlé uses dried coconut, coconut milk and condensed milk; ingredients and times are not interchangeable. We added about 15 minutes to cool. Makes six small servings.
