  • 1,000 g beef chuck in 3 cm cubes
  • 400 g small potatoes, halved
  • 2 pieces thickly sliced carrots
  • ½ piece chopped onion
  • 2 cloves chopped garlic
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 500 ml hot water
  • 2 leaves bay leaf
  • 1 teaspoon salt

1 cup = 240 ml. Measurements follow the original recipe.

Prepare beef and vegetables.

Cut beef and season with half the salt. Prepare onion, garlic, potatoes and carrots. Check the valves and your pressure cooker's instructions.

Build the flavor base.

With the pot open, heat olive oil. Stir onion for 2 minutes, then add garlic, tomato paste and bay leaf. Sauté for 1 more minute without burning.

Pressure cook the beef.

Add beef, water and remaining salt. Respect the manufacturer's minimum liquid and fill limit. Close properly. Once pressure builds, lower the heat and cook for 25 minutes, then turn off.

Add the vegetables.

Open only when pressure is fully released. Add potatoes and carrots; replenish liquid if needed. Close and cook for 5 minutes after pressure builds again. Turn off.

Check and adjust the sauce.

Wait for natural pressure release again. Open, check that beef and vegetables are tender, and remove the bay leaf. To thicken the sauce, boil uncovered for a few minutes.
