Caldo verde

A homemade version of the soup loved in Brazil. Potatoes are mashed in the pot, with no need to blend hot liquid.

What we'll need

  • 600 g peeled potatoes
  • 200 g calabresa sausage
  • 3 leaves stemmed collard greens
  • ½ piece onion
  • 1 clove garlic
  • 1,200 ml water
  • 1 tablespoon olive oil
  • ½ teaspoon salt

1 cup = 240 ml. Measurements follow the original recipe.

Serves 4 people.

Chop the ingredients.

Cut potatoes into 2 cm cubes and finely chop onion and garlic. Slice sausage and cut washed greens into very thin strips.

Brown and sauté.

Heat olive oil in the pot and brown sausage for about 5 minutes. Set aside on a plate. In the same pot, sauté onion and garlic for 2 more minutes.

Cook the potatoes.

Add potatoes, water and half the salt. Once boiling, lower heat and cook for about 20 to 25 minutes, until cubes fall apart when pressed with a fork.

Mash in the pot.

Turn off the heat. Mash potatoes in the pot until the soup is creamy. Leave a few pieces if you like.

Add greens and sausage.

Return to low heat with sausage and greens. Cook for about 5 minutes, stirring. Taste and add remaining salt only if needed. Serve hot.
