Brigadeiro truffles
Chocolate, a saucepan and a little patience for cooling. Makes about 24 sweets, or 8 servings of 3, each about a heaped teaspoon.
What we'll need
- 395 g condensed milk
- 3 tablespoons 50% cocoa chocolate powder
- 1 tablespoon butter
- 1 cup chocolate sprinkles
- 1 teaspoon butter for greasing
1 cup = 240 ml. Measurements follow the original recipe.
Serves 8 people.

Here's how it's done.

Gather the ingredients
Measure everything. Keep greasing butter and sprinkles separate from the base. Prepare a shallow plate for the mixture and paper candy cups.

Mix before heating
In the cold pan, mix chocolate powder into condensed milk, breaking up lumps. Add the base butter and turn heat to low.

Reach rolling consistency
Stir continuously, scraping bottom and sides. After about 10 to 15 minutes, the mixture thickens and comes together when tilted. A spatula leaves the pan bottom visible for a few moments. Turn off.

Let the mixture cool
Spread onto the lightly greased plate. Wait about 30 minutes until completely cool; if still warm, wait longer before touching.

Roll and coat in sprinkles
Lightly butter your hands with the reserved butter. Shape equal portions and roll in sprinkles. Place in paper cups; yield depends on ball size.
About this recipe and its sources
We chose a base without extra milk, similar to Nestlé's; Panelinha adds milk and has a different reduction time. Consistency matters more than the clock. We included an estimated 30 minutes of cooling and a yield of about 24 sweets.
