Baião de dois with cheese
A practical vegetarian adaptation with coalho cheese. Use already cooked, refrigerated rice and black-eyed peas: their preparation is not included in the time.
What we'll need
- 2 cups already cooked white rice
- 1½ cups cooked, drained black-eyed peas
- 150 g cubed coalho cheese
- ½ piece onion
- ½ piece green bell pepper
- 2 cloves garlic
- 1 tablespoon butter
- ¼ cup water
- 1 tablespoon chopped cilantro
- 1 pinch salt
1 cup = 240 ml. Measurements follow the original recipe.
Serves 4 people.

Here's how it's done.

Prepare the ingredients.
Fluff the rice with a fork and drain the beans. Chop onion, seeded pepper, garlic and cilantro. Cut cheese into 2 cm cubes.

Brown the cheese.
Heat a nonstick pan over medium heat. Brown cheese cubes on two sides for about 3 minutes. Transfer to a plate.

Sauté the aromatics.
Melt butter in the same pan. Stir onion and pepper for 3 minutes. Add garlic and cook for 1 more minute.

Add rice and beans.
Add rice, beans and water. Mix gently, cover and heat for about 4 minutes over low heat, until hot in the center.

Finish with the cheese.
Return cheese to the pan, stir in cilantro and heat for 1 more minute. Taste before adding salt. Serve hot.
About this recipe and its sources
A simplified vegetarian version with coalho cheese. Rice and beans are already cooked. This is not the only traditional way to make baião de dois.
