Arroz carreteiro (beef rice)
Rice with shredded dried beef, bacon and calabresa sausage. Use already desalted, cooked dried beef; desalting and precooking are not included.
What we'll need
- 2 cups uncooked white rice
- 4 cups hot water
- 100 g desalted, cooked and shredded dried beef
- 250 g sliced calabresa sausage
- 70 g diced bacon
- ½ piece chopped onion
- 2 cloves chopped garlic
- 1 tablespoon oil
- 2 leaves bay leaf
- 2 tablespoons chopped parsley
1 cup = 240 ml. Measurements follow the original recipe.
Serves 6 people.
Here's how it's done.

Get the pot ready.
Measure rice and water. Shred prepared dried beef, cut the meats and chop the aromatics. Set out a large pot with a lid.

Brown the meats.
Heat oil, add bacon and sausage and sauté for about 5 minutes, stirring until browned. Remove excess fat if needed.

Coat the rice.
Add onion, garlic and bay leaf and sauté for 3 minutes. Add dried beef and raw rice. Stir for 1 more minute to coat the grains.

Cook over low heat.
Carefully pour in hot water. When boiling, lower the heat and leave the lid ajar for about 18 to 20 minutes. Check that rice is tender and liquid absorbed.

Rest and finish.
Turn off the heat, cover and wait 5 minutes. Remove bay leaf, fluff with a fork and stir in parsley. Serve hot.
About this recipe and its sources
The dried beef must already be desalted, cooked and shredded. That preparation is not included in the 45 minutes. Use two measures of water to one of rice.
